Welcome – 2018 Méthode Champeniose

Amuse Bouche – Pan seared sea scallops, sweet corn purée, avocado mousse, Hatch chili oil. Paired with 2021 Estate Gewürztraminer

First Course – Dungeness Citronette Salad. Baby arugula, thin sliced celery, Dungeness crab, citronette, roasted hazelnuts, Parmigiano-Reggiano, caramelized pear. Paired with 2021 Estate Riesling

Second Course – Duck Consommé. Clear duck bone broth, duck confit, rosemary, chive oil, with cannellini bean crostini. Paired with 2021 Estate Viognier

Third Course – Traditional Porcetta. Tender pork loin, butterflied and seasoned with fennel, rosemary, garlic, lemon zest and mustard, rolled tight, wrapped in pork bely, crispy roasted, with roasted fennel. Paired with 2018 Estate Dolcetto

Fourth Course – Duxelles Tenderloin. Duxelles stuffed beef tenderloin, seared and roasted, accompanied by dried fig caponata, Marsala Demi sauce, parsley oil, wilted Swiss chard, baby potatoes. Paired with 2019 Estate Reserve Malbec

Dessert – Olive oil cake, ginger glaze, blueberry sauce, whipped cream. Paired with 2019 Estate Reserve Syrah
